🍅 The Last-Tin Tomato Pasta

One pot, very little fuss, and plenty of room for substitutions.
⏱ 20 minutes🍽 2 generous serves
What you’ll need
- 200 g dried pasta
- 1 tbsp olive oil (optional)
- 1 small onion or 1 tsp dried onion flakes
- 1 tin (400 g) diced tomatoes
- 1 tin (400 g) chickpeas, drained
- 1 tsp dried mixed herbs
- 2 cups (500 mL) water, plus more as needed
- Salt and pepper, to taste
How to make it
- Combine pasta, onion, tomatoes, chickpeas, herbs and water in a large pot. Add the oil if using.
- Bring to a simmer, stirring often so the pasta doesn’t stick.
- Cook for 12–15 minutes, until the pasta is tender. Add a splash of water whenever the pot becomes too dry.
- Season, then serve. Add cheese, frozen spinach or chilli flakes if you have them.
Little kitchen note
A tin of lentils works instead of chickpeas. Check the pasta packet: cooking times vary.
